Chipate (a flat bread)

Chipate is a Ugandan style flat bread that is used to dip in stews or to be eaten by itself. It is also good folded around chicken and rice or with butter.




My version of chipate:
1 cup white flour
1 1/2 cup spelt flour
2 tsp. vegetable oil
2/3 cup of water
pinch or two of salt
handful of chopped onions
pinch of powered garlic

Knead together all of the above ingredients in a medium bowl until it looks like pizza dough(or tortilla dough). Makes about 6 2inch balls of dough or 18 smaller balls of dough. Roll each ball flat using a rolling pin. Cook them for 1 to 3 minutes each side on a medium-heat ungreased skillet until they are light brown and bubbly. Serve with seasoning salt, chicken, beans and rice.

You can also add chopped green peppers or carrots instead of onion.
